Red pepper chicken sausage & egg bites (Starbucks copycat recipe)
Servings: 6 (12 bites) | Time: 25 minutes | Dairy-free, gluten-free, high-protein
A high-protein breakfast that is much cheaper than eating out and better for you, too! These savory egg bites with spicy red pepper chicken sausage, fresh spinach, and rich eggs are an easy meal prep dish that you can make ahead of time. Perfect for a busy morning, this gluten-free, high-protein recipe is about to be on your regular breakfast rotation.
Appliances & Utensils
12-count muffin tin
Muffing tin liners
Measuring cups & spoons
Large mixing bowl
Whisk or fork
Knife & cutting board
Ingredients
3 cloves garlic, minced
8 eggs
2 handfuls spinach
1 pack fully cooked red pepper chicken sausage
Instructions
Preheat: Preheat your oven to 325°F and add liners to your muffin tin.
Prepare the egg mixture: In a large bowl, whisk 8 eggs, then stir in the garlic and spinach.
Add chicken: Chop the red pepper chicken sausage into small slices and add to the egg mixture. Combine.
Fill the muffin tin: Pour the mixture evenly into the muffin tin cups, filling each about 3/4 full.
Bake: Bake for 22 minutes, or until the egg bites are fully cooked.
Cool: Let cool and cover with tin foil before placing it the fridge.
Serve: To serve, remove from muffin tin liners and heat for 30 - 60 seconds. Enjoy!
Pro Tip: If you aren't a fan of spice, consider swapping for a different flavored of fully cooked chicken sausage.
For vegetarian/vegan dietary restrictions: For a vegetarian option, omit the chicken sausage and top with avocado for a little something extra.
