1/4 teaspoon kosher salt
For the skillet: 
1 pack Amylu's maple apple chicken sausage links
5 eggs
1/4 teaspoon kosher salt
1 cup frozen spinach
Instructions
Prepare the potatoes: Preheat the oven to 400°F and line a small baking sheet with parchment paper. Add the 4 washed and diced potatoes to a bowl of water for 10 minutes to soak, then dry with a paper towel. Add them to the sheet pan and drizzle with 1 tablespoon of extra-virgin olive oil, sprinkle with 1/4 teaspoon of kosher salt, and toss to coat. Roast for 30 to 40 minutes, flipping halfway through, until the potatoes are golden and softened.
