Vibrant & colorful vegetable grazing board with garlic hummus

Ingredients

(Servings: 15 - 20)

  • 2 red bell peppers

  • 2 yellow bell peppers

  • 2 orange bell peppers

  • 2 English cucumbers

  • 1 bag baby carrots

  • 1 large pack GF seed crackers (I prefer Mary’s Gone or the Trader Joe’s version)

  • 1 large container garlic hummus

  • 1 Tbsp olive oil - My favorite is Kosterina, get 15% off with code GRACE05737

  • 1/4 tsp red pepper flakes

  • 2 turns black pepper

Appliances & Utensils

Instructions

  1. Prepare the veggies: Wash and dry 2 red, 2 yellow, and 2 orange bell peppers. Slice them into long strips, removing the seeds and stems. Wash 2 English cucumbers and slice into spears.

  2. Arrange the platter: On a large serving board or platter, scoop the garlic hummus in the center. Spread out the sliced bell peppers, sliced cucumbers, and carrots around the hummus. Add in the seed crackers in the remaining space on the board.

  3. Top the hummus: To finish the board, drizzle 1 Tbsp olive oil, ¼ tsp red pepper flakes, and 2 turns of black pepper directly over the hummus.

Pro Tip: This is a great option to prep-ahead of time to take to a party. You can make this ahead of time and add the crackers to the platter before heading out the door.
