Heirloom BLTs with an arugula salad
Servings: 4 | Time: 10 minutes | Dairy-free, gluten-free, high-protein
Better for you BLT open-faced sandwiches are about to be your new favorite summer lunch. Taking just a few minutes to assemble the buckwheat bread base, creamy avocado mayo, sizzling turkey bacon, and juicy heirloom tomatoes, this is my new favorite way to enjoy this delicious summer produce.
Appliances & Utensils
Measuring spoons & cups
Medium mixing bowl
Knife & cutting board
Large pan & spatula
Toaster
Ingredients
For the toast:
1 pack of gluten-free bread or seed bread
1 pack of turkey bacon
3 Heirloom tomatoes, washed and sliced
4 tablespoons of avocado mayonnaise
For the salad:
1 bag of arugula
4 tablespoons of pesto
Instructions
Cook the turkey bacon: In a pan over medium heat, cook turkey bacon for 4–5 minutes per side, or until crispy. Set aside on a paper towel to drain.
Toast the bread: Lightly toast 8 slices of gluten-free or seed bread until golden.
Assemble the sandwiches: Spread avocado mayo on one slice of bread. Top with turkey bacon and sliced Heirloom tomato.
Make the side salad: In a bowl, mix 3 cups of arugula with 4 tablespoons of pesto. Mix until combined.
Serve: Plate the toast immediately with the side salad and enjoy!
Pro Tip: My favorite gluten-free bread is made with just 2 ingredients - Pacha!
For vegetarian/vegan dietary restrictions: Swap the turkey bacon out for pre-marinated tofu or hummus.
