Blackened chicken with pesto broccoli & sweet potato
Servings: 4 | Time: 65 minutes | Dairy-free, gluten-free, high-protein
Spiced chicken with vibrant green broccoli and an extra sweet sweet potato, all covered in a refreshing pesto, this dish is balanced and flavorful.

Ingredients
For the skillet:
1 spray avocado oil
1 pound chicken breasts
1/2 tablespoon paprika
1 teaspoon onion powder
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon oregano
For the sides:
4 mini sweet potatoes, washed
8 tablespoons basil pesto
1 bag frozen broccoli
4 tablespoons sauerkraut
Instructions
Prepare the sweet potatoes: Preheat the oven to 400°F. Wash 4 mini sweet potatoes and pierce each several times with a fork. Place them on a baking sheet lined with parchment paper and roast for 50 to 60 minutes, or until softened.
Season the chicken: In a small bowl, mix together ½ tablespoon paprika, 1 teaspoon onion powder, ½ teaspoon kosher salt, ½ teaspoon black pepper, and ½ teaspoon oregano. Rub the spice mixture evenly over both sides of the chicken breasts.
Cook the chicken: Heat a large skillet over medium-high heat and lightly coat with 1 spray avocado oil. Add the seasoned chicken breasts and cook for 5 to 6 minutes per side, or until the outside is deeply browned and the internal temperature reaches 165°F. Remove from heat.
Steam the broccoli: Steam 1 bag of frozen broccoli according to package instructions.
Serve: Slice open the roasted sweet potatoes. Add a portion of steamed broccoli, sliced blackened chicken, and top with 2 tablespoons basil pesto. Finish with 1 tablespoon sauerkraut. Enjoy!
Pro Tip: Swap the sauerkraut for pickled onions if you aren't a fan.
For vegetarian/vegan dietary restrictions: Prepare tofu with the same seasonings as the chicken and enjoy!
