Cilantro-lime rice bowl

A tangy cilantro-lime flavored rice topped with savory ground beef, browned peppers and onions, with creamy avocado on top.

Ingredients
For the rice:
1 1/2 cups dry white rice, rinsed and drained
3 cups water
1 lime, juiced
1/2 cup fresh cilantro, washed and diced
1/4 teaspoon kosher salt
1 tablespoon extra-virgin olive oil - My favorite is Kosterina, get 15% off with code GRACE05737
For the vegetables:
1 spray avocado oil
1 yellow onion, washed and sliced
2 green bell peppers, washed and sliced
For the beef:
1 pound lean (93/7) ground beef
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon kosher salt
For the topping:
2 avocados, washed and sliced
1 container salsa
Instructions
Cook the rice: In a medium pot, combine 1 ½ cups rinsed white rice with 3 cups water. Bring to a boil over high heat, then reduce to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let sit covered for 5 minutes.
Cook the vegetables: Heat a large skillet over medium heat and spray lightly with avocado oil. Add the sliced yellow onion and 2 sliced green bell peppers. Sauté for 7 to 8 minutes, stirring occasionally, until softened. Move to the side of the skillet.
Cook the beef: In the same skillet, add 1 pound lean ground beef. Cook over medium heat, breaking it apart with a spatula, until fully browned. Stir in 1 tablespoon chili powder, 1 teaspoon cumin, ½ teaspoon dried oregano, ½ teaspoon garlic powder, and ½ teaspoon kosher salt into the beef.
Prepare the rice: In an additional bowl, fluff with a fork, then stir in the juice of 1 lime, ½ cup chopped fresh cilantro, 1 tablespoon extra-virgin olive oil, and ¼ teaspoon kosher salt. Set aside.
Serve: Add cilantro-lime rice to each bowl, then top with sautéed onions and peppers, seasoned beef, fresh avocado slices, and salsa. Enjoy!
Pro Tip: Be sure to rinse the white rice well ahead of time in a small colander, until the water of the rice is clear. This will improve the flavor of the rice.
For vegetarian/vegan dietary restrictions: Cook the vegetables and beef in a separate pan. Prepare lentils in place of the beef to make it vegan-friendly.
