Let's keep it simple for this easy weeknight dinner ground beef dish. Made with fresh bell peppers, onions, and a bit of crunchy chili oil, be prepared for a flavor explosion!

Ingredients
For the skillet:
3 mixed colored bell peppers, washed and sliced
1/2 cup sliced yellow onion, rinsed
1 handful of spinach
1 pound 93/7 ground beef
1 spray of avocado oil
1 tablespoon crunchy chili oil
1/3 cup coconut aminos
1/4 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon ginger powder
1/4 teaspoon onion powder
1/2 lime, juiced
For serving:
1 cup brown rice, cooked
2 cups fresh arugula
1 avocado, washed and sliced
2 tablespoons green onion, washed and sliced
Instructions
Prepare rice according to package.
Prepare the vegetables: Heat a large skillet over medium heat and add 1 spray of avocado oil. Once hot, add in ½ cup of sliced yellow onion and 3 sliced mixed bell peppers, cooking for 5 to 6 minutes until the vegetables are tender.
Add in the beef: Push everything to the side of the skillet, then add 1 pound of 93/7 ground beef. Break it up with a spatula and cook until fully browned, about 6 to 7 minutes. Sprinkle in 1 tablespoon crunchy chili oil, 1/3 cup coconut aminos, juice of 1/2 a lime, 1/4 teaspoon kosher salt, 1/4 teaspoon ginger powder, 1/4 teaspoon onion powder, and 1/4 teaspoon garlic powder. Mix everything together, add in one large handful of spinach and keep on medium heat for about 3 minutes.
Serve: To a bowl, add a scoop of rice, a handful of arugula or mixed greens and the firecracker mixture. Top with freshly sliced avocado, sliced green onions, and enjoy!
Pro Tip: Consider swapping out the vegetables with whatever you have on hand.
For vegetarian/vegan dietary preferences: Swap the beef the crumbled tofu.
