Turkey stuffed sweet potatoes
Servings: 4 | Cook Time: 75 minutes | Dairy-free, gluten-free, high-protein
These roasted sweet potatoes bring out a caramel flavor that is balanced by the ground turkey and spinach stir fry.

Ingredients
For the sheet pan:
4 mini sweet potatoes, washed
For the skillet:
1 tablespoon extra-virgin olive oil - My favorite is Kosterina, get 15% off with code GRACE05737
1 pound lean (93/7) ground turkey
1 tablespoon cumin
2 teaspoons dried parsley
3/4 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon coriander
1/4 teaspoon oregano
1/8 teaspoon turmeric
2 cups frozen spinach
For the toppings:
2 cups broccoli, steamed
4 tablespoons Caesar dressing (Primal Kitchen is my favorite!)
Instructions
Prepare the sweet potatoes: Preheat the oven to 400°F. Wash 4 mini sweet potatoes and pierce each several times with a fork. Place them on a baking sheet lined with parchment paper and roast for 50 to 60 minutes, or until softened.
Cook the turkey filling: Heat a large skillet over medium heat with 1 tablespoon olive oil. Add 1 pound lean ground turkey and cook, breaking it apart with a spatula, until fully browned. Stir in 1 tablespoon cumin, 2 teaspoons dried parsley, ¾ teaspoon garlic powder, ½ teaspoon kosher salt, ¼ teaspoon coriander, ¼ teaspoon oregano, and ⅛ teaspoon turmeric. Mix well. Stir 2 cups frozen spinach into the skillet and cook for 3 to 4 minutes, until the spinach is heated through. Remove from heat and set aside.
Steam the broccoli: While the turkey filling finishes, steam 2 cups of broccoli according to package.
Serve: Slice open the roasted sweet potatoes. Add a portion of steamed broccoli, turkey and spinach mixture, and top with 1 tablespoon Caesar dressing. Enjoy!
Pro Tip: Prepare a big batch of sweet potatoes and store in the fridge in an air-tight container to save on cooking time.
For vegetarian/vegan dietary restrictions: Swap the ground turkey for crumbled tofu, cooked with the spices.
