The story behind these Sesame beef & red rice nourish bowls
Ridiculously nourishing and absolutely delicious — that's my goal with every recipe that I create. After my own struggle with hormone health, I've learned the importance of balancing every dish, packing in hormone-healthy ingredients for an extra boost to support my body well.
With a love for Asian-inspired dishes, I'm always searching for new ways to enjoy the sweet savory flavor profile, with added benefits from different nourishing ingredients. Once I discovered that organic, gluten-free pigmented rice (red rice) offers ant-inflammatory properties to support overall health, I knew I had to give it a try!
This dish was exactly what I was hoping for! Rich in iron and vitamin B6 from the grass-fed and finished ground beef, high in fiber from the zucchini, topped with sesame seeds support hormone balance, and cilantro for supporting detoxification — this bowl has so many benefits!
I truly believe that healthy eating doesn't have to be complicated. With a little prep and creativity, you can enjoying nourishing and flavorful meals all week long!*

Ingredients for these Sesame beef & red rice nourish bowls
For the rice:
1 cup red rice, rinsed and drained (I love Lotus Foods' Organic Red Rice)
1 ¾ cups water
pinch of kosher salt
For the beef:
1 tablespoon extra-virgin olive oil
1 pound (93/7) lean ground beef
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon ginger powder
1/2 teaspoon kosher salt
For the zucchini:
1 tablespoon extra-virgin olive oil
2 zucchini, washed and sliced into rounds
1/8 teaspoon kosher salt
For the toppings:
Fresh cilantro, chopped
Sesame seeds, for topping
Sesame dressing, for topping (I like SideDish's Creamy Sesame Dressing, made with avocado oil)
How to make these Sesame beef & red rice nourish bowls
Cook red rice: Combine water, rice and a pinch of salt. Bring to a boil. Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes. Fluff.
Cook beef: Heat a skillet over high heat. Turn to medium and add olive oil. Add ground beef and salt. Cook until browned. Add garlic, onion, and ginger powder. Continue cooking until combined. Set aside.
Cook zucchini: In the same pan, turn to medium heat. Add olive oil, zucchini, and salt. Sauté until brown, continually stirring to soften zucchini.
Prepare: Store red rice, zucchini, and beef in separate air-tight containers. Let cool, then store in the fridge for up to 4 days.
Serve: In each bowl, add red rice, zucchini, and beef. Top with sesame dressing, fresh cilantro and sesame seeds. Enjoy!
