Ingredients for gluten-free apple cinnamon baked oatmeal
Dry ingredients:
2 cups rolled oats
1 tablespoon flaxseed meal
2 teaspoons cinnamon
¼ teaspoon ginger powder
⅛ teaspoon nutmeg
1 teaspoon baking powder
Wet ingredients:
1 (16-oz) can unsweetened coconut milk
¼ cup pure maple syrup
½ cup unsweetened applesauce
2 teaspoons vanilla extract
3 red apples, diced
For topping:
½ cup pecan pieces
How to make this easy baked oatmeal
Preheat oven to 375°F and line baking dish with parchment paper.
Mix all dry ingredients in a bowl (oats, flaxseed meal, cinnamon, ginger powder, nutmeg, baking powder).
Mix all wet ingredients in a separate bowl (coconut milk, maple syrup, applesauce, vanilla extract, apples).
Add the dry ingredients into the wet and stir until combined.
Pour into the lined baking dish, top with the pecan pieces, and bake for 45 to 55 minutes. Enjoy!
