Gluten free English muffins
Servings: 6 | Cook Time: 25 minutes | Dairy-free, gluten-free, high-protein
Ingredients
2 eggs
2 tablespoons honey
1 teaspoon lemon juice
3 1/2 cups almond flour
1 teaspoon baking soda
1/4 teaspoon kosher salt
Appliances & Utensils
Mixing bowls
Measuring spoons & cups
Baking sheet
Parchment paper
Instructions
Preheat the oven: Preheat your oven to 325°F and line a large baking sheet with parchment paper.
Prepare the mixture: In a medium bowl, whisk together 2 eggs, 2 tablespoons honey, and 1 teaspoon lemon juice until smooth. Add in 3½ cups almond flour, 1 teaspoon baking soda, and ¼ teaspoon Kosher salt, stirring until a thick dough forms. Roll into a large ball and then form into individual rounded biscuits, about 12, and place on baking sheet. Bake for 20 - 22 minutes, or until slightly hardened.
Serve: Pair these biscuits with chia seed jam or egg & turkey sausage. Enjoy!
Pro Tip: Swap the honey for maple syrup for more of a breakfast flavor.
